Healthy Fruit Compote
Ingredients
- 3 cups 430 g mixed berries (fresh or frozen)
- 2 tbsp orange juice
- Zest of half an orange
- ½ tsp cinnamon
- ½ tsp ground ginger
- 1 Tbsp maple syrup optional
- 1 Tbsp chia seeds
Instructions
- Place the berries, juice, zest, spices, and syrup to a saucepan and bring to a boil over medium-high heat. Stir occasionally to break up the berries and prevent scorching.
- Once it reaches a boil, lower the heat to low and let simmer for about 10 minutes, stirring often, continuing to break up the fruit.
- Remove from the heat and stir in the chia seeds. Let cool and pour into a storage container, and keep refrigerated for up to a week.
